Hi all!
I always struggle through the weekend with my eating. Just seems hard to stay on track with all the weekend activities and my different schedule.
So, tonight we had this delicious concoction:
Chicken Sausage and Veggies over Polenta
Ingredients:
2 Basil Chicken Sausage Links (casings removed)
1 cup sliced Zuchinni
1 cup sliced Peppers
1/2 cup canned diced tomatoes
Minced Garlic
Italian Seasoning
Salt
1/2 tube Prepared Polenta
2 Tbs. Olive Oil
Shredded Parmesan Cheese
1. Add sausage, zuchinni, peppers, garlic, Italian seasoning, and 1 Tbs of olive oil to a pan and salute about 10 minutes until the sausage is cooked through.
2. Add tomatoes to the pan and let everything hang out for another few minutes.
3. In a separate pan heat 1 Tbs of olive oil.
4. Slice the prepared polenta in 1/2 inch slices, and cooked in the oil in the second pan. Season the polenta with a dash of salt.
5. Place polenta on a plate, then top with the sausage mixture, then sprinkle with some parmesan cheese.
That's it. Super yummy and filling and low calorie!!
